Baked Squash (Terri Rowden)
Baked Squash
Ingredients:
1-2 lbs. yellow squash
1 small onion
1 tsp. minced garlic
1 cup grated cheese
1/2 stick butter
Salt and pepper to taste
1/2 tsp. sugar
2 tbs. corn starch
Saltine crackers
Instructions:
- Wash and cut squash into 1 inch rings
- Cook squash with onion and garlic in salted water +/- 15 minutes or until done. (I like to quickly sauté onion and garlic in a little oil prior to adding to squash.)
- When cooked, drain squash and return to pot. Coarsely mash.
- Add remaining ingredients, except crackers, and mix.
- Pour in baking dish.
- Top with crackers and bake at 350 degrees for approximately 30 minutes.
