Baked Squash (Terri Rowden)

Baked Squash

Ingredients:

1-2 lbs. yellow squash
1 small onion
1 tsp. minced garlic
1 cup grated cheese
1/2 stick butter
Salt and pepper to taste
1/2 tsp. sugar
2 tbs. corn starch
Saltine crackers

Instructions:

  1. Wash and cut squash into 1 inch rings
  2. Cook squash with onion and garlic in salted water +/- 15 minutes or until done. (I like to quickly sauté onion and garlic in a little oil prior to adding to squash.)
  3. When cooked, drain squash and return to pot. Coarsely mash.
  4. Add remaining ingredients, except crackers, and mix.
  5. Pour in baking dish.
  6. Top with crackers and bake at 350 degrees for approximately 30 minutes.
